Low-Carb Cauliflower salad is one of the best alternatives to rice, potatoes, or potato salad and other types of salads that are loaded of high amount of carbohydrates. To those who are on a low-carb, LCHF, or Ketogenic diet, this salad is perfect with any of your other main dishes such as meat, fish or as it is. Recipe below is my own version I made at home but you can definitely be creative and make a twist on your own! 🙂

Cauliflower

Ingredients:

1 whole Cauliflower

4 hard-boiled cooked eggs

2 dl Crème Fraiche or Sour cream (Alternativ Greek/Turkish Yoghurt)

2-3 dl Mayonnaise (Homemade or ready-made)

1 medium white or red onions

Salt

Grounded Black Pepper

Chives or Parsley

Steps:

  1. Wash and separate cauliflower into pieces
  2. Cook the cauliflower pieces into a boiling water for a few mins (approx 3-5 minutes depending on how crispy or soft you want them to be)
  3. Strain the hot water when done and let the cauliflower cool down
  4. Chop the onions, parsley and the hard-boiled eggs
  5. Mix the Crème Fraiche, Mayonnaise and chopped onions. Blend well.
  6. Season and add flavor by adding your desired amount of salt and black pepper
  7. Add the chopped eggs into the mixture
  8. Lastly, add the cooled down and cooked cauliflower
  9. Mix well. Add more salt or pepper if needed
  10. Prepare to serve!
